Berry Spinach Salad with Skinny Creamy Balsamic Vinaigrette

Ingredients

1 skinless boneless chicken breast

4 - 5 strawberries, quartered

½ cup of blackberries

½ cup blueberries

½ cup crumbled goat cheese

¼ cup pecan pieces, toasted

¼ cup pickled red onion

Directions

1. Add sliced onion to a jar.

2. To a small pot add vinegar, 1 cup water, salt and 1 table sweetener or your choice

3. Bring up to a boil then pour over your onions. Once it has reached room temperature cover and refrigerate up to 3 weeks

4. Combine
